Lemon Pepper Chicken

Ingredients
  • 2 lbs Chicken Breast, Skinless / Boneless
  • 2 tsp Salt
  • 2 tsp Black Pepper
  • 2 tsp Oregano, Dried
  • 2 tsp Garlic Powder
  • 2 tsp Paprika
  • 1 tbsp Lemon Zest (microplaned or chopped very small)
  • 2 tsp Olive Oil
  • 1 tbsp Butter, Light
  • 2 tbsp Lemon Juice, Fresh (Use the juice from 1 entire lemon, It may be slightly more or less than this. You can reserve some and add at the end if you think it will be too lemony.)
  • 4 tbsp Water
Instructions
  1. Cut chicken into cube-sized pieces.

  2. Combine all ingredients except for the lemon juice and butter.

  3. Marinate chicken for 30 minutes (or longer).

  4. Cook chicken in frying pan until done (165°F (73.9°C)) about 7 minutes.  Since we are cooking with very little fat after you start to brown the chicken adding a few tablespoons of water will help the chicken cook through.

  5. Serve with Lemon Garlic Rice or another side.
